Wheat-free Chocolate & Cherry Cake

Ingredients

100g dark chocolate cut into small bits
125g ground almonds
200g soft butter or margarine + a little for greasing the cake tin
180g sugar or 90g honey
4  separated eggs. Whip egg white until stiff
2-3 dessert spoons rum (optional)
a heaped teaspoon cinnamon
100g porridge oats
1 level teaspoon baking powder
1 large jar sour cherries (without juice should weigh 500g)
icing sugar to decorate

You will need : 28cm spring baking tin
Preheat oven to 155°C

1. whisk butter, sugar, egg yolks together and add rum and cinnamon
2. mix in chocolate, almonds and baking powder together
3. mix in oats and fold in egg whites
4. line form with butter and oats
5. fill baking form with mixture
6. place cherries evenly on top
7. bake in preheated oven for 60mins
